In July, some of our group members took part in the Missing Ingredients culinary skills course. The course is designed to develop cooking skills as well as facilitate an environment through which they can develop soft skills such as communication, teamwork and project management. It also ties in with the wellbeing aspect of the programme at the Matt Talbot as it covers healthy eating and nutrition.
Each week a participant chose a meal that they would like to cook for our group and then the meal was made as a team. The course covered all aspects of producing a meal from shopping for the most cost effective ingredients to the HACCP food safety procedures. Participants also conducted research on the meal that they chose which included the origins of the dish and the health benefits of the ingredients. For example, we learnt that turmeric can help to control blood pressure and give your skin a subtle glow!
Food has always played a significant role in what we do and sitting down to community meals has always been an integral part of our day here. The course has been a great success at the Matt Talbot and has ensured that the kitchen is always full of great tasting food! One week we sat down to spaghetti bolognese and another week we had southern fried chicken with vegetables. We hope that the benefits of the course will extend out to the families of our group members and our participants will continue to cook in their own homes too!
